Injection
Injection is often the first step in creating a marinated meat product. The formulated marinade is forced through stainless steel needles and into the center of the muscle, commonly referred to as pumping. Piercing the muscle in this way and placing marinade between muscle fibers promotes retention of marinade within the cell structure of meat. Following the use of an injector, product can be sat in extra marinade or could be moved to a vacuum tumbler with extra marinade to increase uptake of liquid.
Tumble Marination
Tumble marination is utilized in our industry to add value to raw materials. During tumbling a vacuum is pulled in main barrel of the machine which in turn helps pull marinade into the muscle and can increase uptake. This process is often used in conjunction with injection and marinade types can range from neutral (salt, water, phosphate to increase juiciness) to seasoning based formulations.
